To level up your chivalry, you can hit a training dummy with a tool (axe, shovel, etc) not a weapon.
Training dummies can be expensive and break quickly. The cheapest way to train up any combat skill is to put your back to a horse and perform a stab. With shorter weapons you may need to rotate right a little. You will cause a handle hit, which deals .5 blunt damage to the horse and still receive XP. The horse regenerates quickly enough that you shouldn't be able to kill it. However, be careful that none of your guild members are doing full damage to the horse.
