A Horse is a female brood mare. You will get it through taming a Wild horse. For a breeding you also need a Stallion (male horse) and a Small stable or a Large stable. they will be breeding at the age of 12.

Releasing a horse allows you to ride it.
It can be trained into a warhorse at the Training Field. Also with high training skill you can sometimes get hardy warhorse, which can be made into heavy warhorse (and with level 100 skill very rarely royal warhorse) with a warhorse armor at the Training Field.

Slaughter

If you slaughter a Horse with the skill Procuration you will get Big hide, Game Meat, Intestines and Bones.
